Uyghur Cuisine - Suyuq'ash (Noodle Soup)

Cooking is my cherished hobby, offering a therapeutic escape from extensive reading and research. Crafting Uyghur cuisine brings immense joy. Allow me to share my Homemade Suyqash, prepared with fresh garden or supermarket ingredients, creating an authentic culinary experience.


This was my engrossing ritual while writing the Encyclopedia of Uyghur Tradition and Social Custom's chapter on Uyghur cuisine, evolving from a mere habit into a dedicated journey of culinary exploration intertwined with scholarly endeavour."


Homemade Suyuq'ash Recipe

Ingredients:

200 grams of lamb

Chinese cabbage

Tomato

Half a stick of sweet pepper

Three stalks of spinach

Salt

Onion

Garlic

Water

Oil

White flour


Cooking Method:

1. Prepare the Dough:

Knead the white flour into a dough similar to what you would use for making Laghman. Make sure the dough is well-kneaded and smooth. Let it cool.

2. Prepare the Filling:

Cut the lamb into small pieces.

3. Sauté the Lamb:

Heat some oil in a pot. Add the lamb pieces and fry them until they turn brown.

4. Add Vegetables:

Add salt, thinly sliced onion, thinly sliced tomato, and chopped sweet pepper to the pot. Also, add the hard bits of Chinese cabbage. Fry everything together until well cooked.

5. Boil Water:

Add enough water to the pot to create a flavorful broth. Let it come to a gentle boil.

6. Prepare the Dough Sheets:

Roll out the dough thinly to create sheets.

7. Add Dough to the Pot:

Cut the dough sheets into pieces and add them to the pot with the lamb and vegetables. Allow them to cook in the broth.

8. Adjust Seasoning:

Taste and adjust the seasoning as needed, adding more salt if necessary.

9. Add Final Vegetables:

Add chopped red pepper, spinach, and thinly sliced Chinese cabbage leaves to the pot. Allow them to cook until they're tender.

10 Assemble Suyuq'ash:

Once everything is cooked to your liking, roll up the mixture in bowls. This will create individual servings of Suyqash.
